Speck Alto Adige PGI is produced according to traditional methods and strict criteria - tested, protected and with a guaranteed origin.
The quality of the speck is only confirmed once the symbol of South Tyrol has been branded onto the rind. Only then does the product fulfil all the requirements for the Speck Alto Adige PGI designation. This abbreviation stands for "Protected Geographical Indication" — an EU seal of quality reserved for products produced using traditional methods and specific criteria.
Since 1996, this designation has been reserved exclusively for speck from lean pork legs that is produced using traditional methods in South Tyrol. The basic recipe has remained unchanged: minimal salt and smoke, ample fresh mountain air, and plenty of time to mature. Every production step is oriented towards these basic principles.

The consistently high quality of Speck Alto Adige PGI is based on the commitment of a protective association founded in 1992.
The Speck Alto Adige Consortium was founded in 1992 to ensure the long-term quality of speck. It comprises only producers who are contractually committed to traditional production methods and undergo rigorous quality control. Only these producers are authorised to produce Speck Alto Adige.
The consortium has developed a comprehensive control system together with the independent control institute IFCQ (Istituto Friulano Controllo Qualità). This system monitors compliance with all quality criteria at every stage of production, from meat selection to the smoking process and maturation.
