Speck since 1976

In 1976, Walter Kofler and his brother founded a company to produce Speck Alto Adige. After the first few years in Meran-Untermais, the company headquarters were relocated to the pilgrimage centre of Unsere Liebe Frau im Walde on the Gampen Pass at an altitude of around 1400 metres.

When the brothers went separate ways in 2005, the company was reorganised and Kofler Speck OHG was founded. Shortly afterwards, a modern production facility was opened at the new location. Since then, the cool, dry mountain air has been a key factor in maturing the products. From the very beginning, the company was developed as a joint effort by the entire family. Since 2017, the products have been sold under the brand name Koflers Delikatessen.

Gentle maturing in fresh mountain air

Speck production is based on traditional family recipes and slow maturing under ideal climatic conditions.

Production is based on our own family recipes, which have been continuously developed since the company was founded. The addition of juniper twigs and berries during the beech wood smoking process gives the bacon its characteristic flavour.

Maturing takes place under controlled conditions in the natural mountain air. In addition to classic Speck Alto Adige, the farm also produces South Tyrolean Bauernspeck. The fresh meat used for the products comes from strictly controlled South Tyrolean farms. Here, the animals are fed exclusively with GMO-free feed - a requirement that only a few farmers fulfil.
