Metzgerei Steiner from the Antholzertal/Valle Anterselva
Metzgerei Steiner is a third-generation family business owned by the Steiner family and is firmly rooted in the Antholzertal. The family business includes several branches, a modern production facility and its own hotel. The combination of butchery, hospitality and regional roots still shapes the business today.
Origin plays a central role: the Antholzertal, which borders the Pustertal/Val Pusteria, offers ideal conditions for the maturation, storage and quality of speck and sausage products thanks to its climate, altitude and unspoilt landscape. Steiner's meat specialities from South Tyrol have won several awards.
Ideal mountain climate & long maturation
The Steiner family's speck production is based on traditional processes, strict guidelines and ethical animal husbandry.
In particular, South Tyrolean Bauernspeck is produced by Steiner according to clearly defined artisanal and technical production criteria. The selection of suitable animals, GMO-free feed and fully controlled processing form the foundations.
After professional cutting, a curing phase of around three weeks follows, during which the hams are moved several times to ensure even salt absorption. The mild seasoning profile, the deliberately reduced salt content and the maturation in the Puster Valley mountain air ensure a stable texture, a clear flavour profile and consistent product quality.
