Around 20 years ago, trained butcher Martin Dipauli laid the foundations for the Martin Speck company. The starting point was his own grocery shop, but his goal was clear from the outset: to have his own production site in his home village of Aldein.
When a suitable space became available in the local artisan area, Dipauli seized the opportunity and began to set up his business. Step by step, the initial facility developed into a business area that now covers almost 10,000 square metres. However, growth was never an end in itself, but the result of well-considered decisions, sales experience and a keen instinct for quality.
Brand presence with clear aesthetics
Martin Speck's company philosophy is characterised by care, controlled quantities and high standards of processing and presentation.
From the very beginning, Martin Dipauli focussed on a conscious production method: small quantities, precisely cut products and a high-quality, aesthetic presentation. Elegant wooden shelves instead of anonymous standard presentations emphasised early on the desire to position speck as a gourmet product.
Dipauli consistently rejected compromises in production - even if this meant a higher price. Production volumes were only increased once processes and quality were fully assured.
This attitude still characterises Martin Speck today: a product for customers who value reliability, care and consistently high quality.
In the bistro recently opened by Martin Speck with an integrated shop, guests can expect more than just a quick coffee: home-made speck and sausage specialities, small savoury dishes and selected products to take away - a meeting place for locals and visitors.
