Speck originated as a way of preserving meat. To make it, raw meat is carefully cured and lightly smoked before being dried in the fresh mountain air for an average of 22 weeks. It is only after this maturation period that traditional Speck Alto Adige PGI acquires its mild, slightly smoky and spicy flavour, making it a tasty ingredient in many dishes.
It develops its flavour profile best when served at room temperature. Therefore, take it out of the packaging at least one hour before eating to allow it to "breathe" and develop its flavour fully.
Thanks to the long maturation process, Speck Alto Adige is easy to digest and completely safe to eat when stored properly. Whether eaten on its own as a snack, on bread, or finely diced in a salad, raw speck has an authentic flavour.
