1 tablespoon wholegrain mustard 4 tablespoons extra virgin olive oil 2 tablespoons lemon juice Salt Pepper
300 g rocket 2 Granny Smith apples 24 thin slices of Speck Alto Adige PGI A few shavings of Parmesan cheese A handful of walnuts
2 tablespoons wholegrain mustard 8 tablespoons extra virgin olive oil 4 tablespoons lemon juice Salt Pepper
Preparation
Prepare the dressing by whisking together the mustard, oil, lemon juice, salt and pepper.
Place a bed of rocket in a large bowl and add the sliced Granny Smith apple, the Parmesan shavings, the walnuts broken up by hand and the thin slices of Speck Alto Adige PGI. Sprinkle with the mustard dressing.
