Preparation
To make the cranberry sauce, place the cranberries, sugar and lemon juice in a saucepan and simmer for 20 minutes, stirring constantly. Add the red wine and spices, simmer for another 10 minutes and leave to cool a little.
Grate the potatoes finely, add the onions, salt, pepper and egg yolk and combine by hand. Chill in the fridge for 30 minutes.
Shape the mixture into 4 röstis, and fry to a golden brown on both sides.
Slice the burger buns and warm briefly in the oven.
Fill the burger buns with cranberry sauce, lettuce, röstis, cheese and Speck Alto Adige PGI and serve.
