Bauernspeck is a type of speck produced from the meat of pigs selected and raised in small groups in the mountain farms of South Tyrol. Available in limited quantities, Bauernspeck has special characteristics also thanks to the right proportion of fat content.
Bauernspeck is derived from the thighs of pigs that are special in terms of size and fat content of their meat, resulting from the non-GMO feed and from their age.
This particular smoked ham is carefully produced according to the traditional method and undergoes extensive controls. These controls start with the farmers’ choice of non-GMO feed and accompany the entire production process. The quality seal is fire-branded on the ham only when all of the quality criteria have been met. The inspections are carried out by the independent control institution INEQ in cooperation with the Council for Agriculture of the Province of Bolzano.
In addition to the thigh, other cuts are also treated to produce Speck (neck, shoulder, loin, and belly) so as to use up all of the animal’s parts, just like tradition requires.
