Burgers with Speck Alto Adige PGI

Juicy burger with South Tyrolean speck, crispy rösti and fruity cranberry sauce: a hearty recipe combining alpine flavours and modern cuisine.

Ingredients for 4 burgers

  • 4 burger buns
  • 250 gram finely sliced Speck Alto Adige PGI
  • 1 small radicchio lettuce
  • 8 slices raclette cheese
  • 4 leaves of lettuce

For the rösti potato fritters

  • 6 floury potatoes, boiled
  • 1 finely chopped onions
  • Pepper to taste
  • Salt to taste
  • 2 egg whites

For the cranberry sauce

  • 250 gram cranberries
  • 100 gram cane sugar
  • 0.5 Lemon juice
  • 120 ml dry red wine
  • 1 pinch cinnamon
  • 1 pinch ginger

Burgers with Speck Alto Adige PGI

Preparation time 45 min

  1. To make the cranberry sauce, place the cranberries, sugar and lemon juice in a saucepan and simmer for 20 minutes, stirring constantly. Add the red wine and spices, simmer for another 10 minutes and leave to cool a little.
  2. Grate the potatoes finely, add the onions, salt, pepper and egg yolk and combine by hand. Chill in the fridge for 30 minutes.
  3. Shape the mixture into 4 röstis, and fry to a golden brown on both sides.
  4. Slice the burger buns and warm briefly in the oven.
  5. Fill the burger buns with cranberry sauce, lettuce, röstis, cheese and Speck Alto Adige PGI and serve.
