For the dough:
40 g carob powder
50 g semolina
50 g wheat flour
olive oil 
1½ eggs
water as needed 
2-3 g salt
For the filling:
100 g mealy potatoes 
25 g onions 
25 g butter
50 g Speck Alto Adige PGI, finely cubed
meat stock as needed
Further ingredients:
1 egg, beaten
Alto Adige Bergkäse or Graukäse
roasted Speck Alto Adige PGI
parsley, minced finely
nut butter
For the dough:
80 g carob powder 
100 g semolina 
100 g wheat flour
olive oil 
3 eggs
water as needed
5 g salt
For the filling:
200 g mealy potatoes
50 g onions
50 g butter 
100 g Speck Alto Adige PGI, finely cubed
meat stock as needed
Further ingredients:
1 egg, beaten
Alto Adige Bergkäse or Graukäse
roasted Speck Alto Adige PGI
parsley, minced finely
nut butter
For the dough:
160 g carob powder 
200 g semolina 
200 g wheat flour
olive oil 
6 eggs
water as needed 
10 g salt
For the filling:
400 g mealy potatoes 
100 g onions 
100 g butter 
200 g Speck Alto Adige PGI, finely cubed
meat stock as needed
Further ingredients:
2 eggs, beaten
Alto Adige Bergkäse or Graukäse
roasted Speck Alto Adige PGI
parsley, minced finely
nut butter
 

Preparation

For the pasta dough, knead a smooth dough out of the carob powder, semolina, wheat flour, olive oil, eggs and salt. Wrap in plastic and let rest for about an hour in the refrigerator. For the filling, boil the potatoes, then cool and dice finely. Dice the onions finely and sauté in butter. Combine with the Speck Alto Adige PGI and potato cubes. Mix in broth, if needed, to make a smooth paste. Roll out the pasta dough by hand or with a pasta maker into thin strips and cut out circles. Brush with egg and place some potato-Speck mixture on top. Fold the circles into half-moon shapes and press the edges together well. Cook the ravioli in abundant salt water. Arrange on plates and top with cheese, roasted Speck Alto Adige PGI and parsley. Drizzle with nut butter and serve.
