I made a Rustic BBQ Pizza. I live in the South and BBQ is a big deal here. Being that Speck Alto Adige is an Italian meat, I thought I should use it in an Italian dish. Who doesn't love pizza? Is Speck something you would use in other dishes? Do you think it's a versatile ingredient, if so, why?
I tried it in eggs and it worked great. I think that it can be substituted anywhere one would use cubed ham. I think it makes a nice alternative for prosciutto, too. What is your favorite thing about using Speck in your recipes? Does it have specific qualities that you enjoy?
I like the smoky flavor that the meat imparts on the different dishes that I used it in.
