Speck with Rucola and Grana cheese

Ingredients for

100 g Speck Alto Adige PGI
50 g Grana cheese from South Tyrol
½ package of rucola
1 tblsp balsamico vinegar
2 tblsp olive oil
salt and freshly ground pepper
200 g Speck Alto Adige PGI
100 g Grana cheese from South Tyrol
1 package of rucola
2 tblsp balsamico vinegar
4 tblsp olive oil
salt and freshly ground pepper
400 g Speck Alto Adige PGI
200 g Grana cheese from South Tyrol
2 package of rucola
4 tblsp balsamico vinegar
8 tblsp olive oil
salt and freshly ground pepper

Preparation

Cut the rind and the crust of the Speck and slice it thinly with a slicing machine. Mix the vinegar with the olive oil, pepper and salt to a vinaigrette. Spread some of the vinaigrette on to the dishes. Arrange the Speck in a circle on the dish and cover it with the rucola. Add the vinaigrette and thinly sliced Grana cheese.

Hints
This is best served with fresh farmer’s bread. You can add other fresh salads, pepper cubes, egg plant in olive oil, pesto, salsa verde or different kinds of mushrooms. Red or green pepper adds a distinct taste as do different cheeses or sauces.
