Ingredients for

4-6 slices Speck Alto Adige PGI
½ kg green asparagus
30-40 g butter
20-25 g Parmesan cheese
basil and lemon
salt and white pepper
8-12 slices Speck Alto Adige PGI
1 kg / 2.2 lbs green asparagus
60-80 g / 2.5 oz butter
40-50 g / 1.5 oz Parmesan cheese
basil and lemon
salt and white pepper
16-24 slices Speck Alto Adige PGI
2 kg green asparagus
120-160 g butter
80-100 g Parmesan cheese
basil and lemon
salt and white pepper

Preparation

Peel the asparagus, discarding woody, dried ends. Bring salted water to the boil, add the asparagus, cover and simmer for 18-20 minutes depending on thickness. Wrap 4-5 asparagus in 2 slices Speck Alto Adige PGI. Melt butter. Arrange the bunches of asparagus in a baking pan and pour the butter over them. Add grated Parmesan cheese. Bake au gratin for 3-5 minutes at 225°C/425°F. Add pepper and garnish with basil and lemon.
