4 Terlano asparagus
salad as you please
40 g thin shards of Parmigiano-Reggiano
4 tbs. vinaigrette
20 thin slices of Speck Alto Adige PGI
8 Terlano asparagus

80 g thin shards of Parmigiano-Reggiano
8 tbs. vinaigrette
40 thin slices of Speck Alto Adige PGI
16 Terlano asparagus

160 g thin shards of Parmigiano-Reggiano

Preparation
Peel the asparagus, discarding woody, dried ends. Bring salted water to the boil, add the asparagus, cover and simmer for 18-20 minutes depending on thickness. Place 2 asparagus on each plate. Put the salad in the middle of the plate and add 5 thin slices of speck, sprinkle with the Parmigiano shards and garnish with vinaigrette.
