The producers of Speck Alto Adige P.G.I. still use the best ingredients and the traditional production methods in South Tyrol.

The unique interaction of spices, smoking, mountain air and edible mould during the production process gives Speck Alto Adige P.G.I. its balanced and unmistakable flavour. Consequently, large and small producers of Speck Alto Adige P.G.I. have joined forces in the Speck Alto Adige. Consortium with the objective of protecting their artisan production processes and most importantly, the stringent compliance with the traditional method of producing Speck Alto Adige. By adding their own seasoning blends, all producers add their very own personal touch to the ham. The recipe for Speck Alto Adige P.G.I. is proudly handed down from generation to generation.
