How to store Speck
If you buy PGI Speck Alto Adige in a vacuum-sealed package, remove it from its packaging and leave it at room temperature for at least a few hours before serving so that its aroma develops and its texture improves. If you buy it without packaging, store it in the lower part of the fridge wrapped in a cloth, greaseproof paper or on a covered plate where the temperature is constant and uniform. Speck should be kept away from strong-tasting food, such as an onion, which could alter its taste. |
