PGI Speck Alto Adige is a raw ham, lightly smoked and aged for 22 weeks. Its appearance, fragrance and flavor make it instantly recognizable as authentic speck manufactured with a traditional processing method, passed down through generations and protected by the European Union. The production specifications essentially include light smoking (at a temperature less than 20°C), an average ageing time of 22 weeks and a salt content not exceeding 5%. Compliance with the production guidelines makes it possible to apply the fire-branded mark to the rind and the label bearing the description “PGI Speck Alto Adige” in Italian and German with the “Südtirol” symbol.


What does PGI stand for?

PGI stands for "Protected Geographical Indication", the European Union’s status that guarantees the quality, the typicality and the source of a given product. The product bearing this status must originate from a prescribed geographic area and have all the characteristics that make it unique and irreproducible outside that area. According to EEC regulation 2081/92, the PGI denomination protects against misuse, imitation or evocation or misleading indications as to the provenance, origin, nature or essential qualities of the products. Speck Alto Adige was awarded the PGI denomination in 1996 based on a set of precise production specifications. Fines can be applied to producers who misuse the Alto Adige denomination or that of an adjacent area or another area in the Alto Adige.
